Did you know that…
One of the traditional ways to prepare bread in the Middle East is with a saj, a large dome-like skillet on top of charcoals or wood fire (nowadays it’s more common to use gas or electricity, as we do in Mezze).
The dough must be flattened very thinly. It is then placed on a special cushion and spread out on the saj and cooked in a matter of seconds. Bread is absolutely essential on the menu!
